How to Make Authentic Korean Kimchi at Home (Easy Recipe)


  • What kimchi is: Kimchi is a traditional Korean side dish made from salted and fermented vegetables, most often napa cabbage or radish, seasoned with garlic, ginger, and chili. It has a spicy, sour, and tangy flavor packed with healthy probiotics 
  • Ingredients: Chinese cabbage, sea salt, ginger, garlic, onion, chilli powder, dried shitake mushroom, dried Kelp, rice flour, water, garlic chives, daikon. 
  • How to make it.
  • 1. Brining for Whole cabbage Kimchi  
    Using 20% salt of total weight of the cabbage. 

    Water: About same amount of cabbage weight

    2/3 salt: use for melting with water. 

    1/3 salt: use for sprinkling onto each layer of cabbage

    Brining for about overnight till you can bend the thick part of cabbage
  • 2. Making stock using Shitake mushroom and Kelp 3. Vege/Kimchi paste(seasoning) prep 4. Making stuffing/mixing 5. Ferment
