Shelf Life & Best-Before Date
How long does your kimchi last?
We give our kimchi a 6-month best-before date from the production date, but this is just a guide. Kimchi is a living, fermented product — it doesn't "go off" in the traditional sense. Over time it becomes more sour as fermentation continues.
What do I do when it gets very sour?
If it's too sour to eat fresh, cook with it! Sour kimchi is perfect for kimchi fried rice, kimchi stew (kimchi jjigae), a simple stir-fry, or kimchi and cheese toasties.
Storage
How should I store my kimchi?
Keep your kimchi refrigerated at all times. Once opened, make sure the lid is on firmly. If your kimchi ever becomes fizzy (from the natural CO₂ produced during fermentation), spread it on a plate for a few minutes to release the gas, or transfer it to a container with a less tight airlock.
Can I move it out of the pouch?
Yes! We ship in food-grade standing pouches rather than glass jars to keep costs down and reduce waste during transit. Feel free to transfer your kimchi to your favourite container at home.
Chilled Delivery
Will my kimchi stay fresh during shipping?
Yes. Because kimchi has a lower pH than 4.6, there is very little chance of harmful bacteria growing even at warmer transit temperatures. Warmer temperatures simply speed up fermentation — the kimchi is completely safe to eat. We send kimchi fresh so it continues to ferment on its way to you.
Do you use ice packs or chilled packaging?
For South Island orders and rural North Island deliveries, we include ice packs and thermal packaging to keep your order as cool as possible during the longer transit time. This is noted at checkout.
When do you dispatch orders?
- North Island: Dispatched Tuesday–Wednesday. Delivery takes 1–2 days from collection.
- South Island & North Island rural: Dispatched on Tuesday only. Delivery takes 2–4 days depending on your location. Allow extra time around public holidays.
Why pouches instead of glass jars?
Glass jar lids can pop off during transit due to fermentation gases, and jars need extra protective packaging — which costs more and creates more waste. Pouches are lighter, safer in transit, and more eco-friendly. You can always transfer the kimchi to your own jar at home.
Spice Levels & Ingredients
How spicy is your kimchi?
Our kimchi uses authentic Korean chilli powder (gochugaru), which we specially import — locally available brands don't produce the right flavour. Spice levels vary by product; check individual product descriptions for guidance. If you're sensitive to heat, start with a smaller serving.
Do you have vegan kimchi?
Yes! We offer vegan kimchi options. Traditional kimchi can contain fish sauce or fermented seafood paste, but our vegan range uses plant-based alternatives so everyone can enjoy it. Look for the "Vegan" label on our products.
How to Use Kimchi
How do I eat kimchi?
Kimchi is incredibly versatile. Here are some of our favourite ways to enjoy it:
- As a side dish (banchan): Serve straight from the jar alongside rice, noodles, or any meal.
- Kimchi fried rice: Stir-fry day-old rice with kimchi, a little sesame oil, and an egg on top.
- Kimchi stew (kimchi jjigae): Simmer older, sour kimchi with tofu, pork (or mushrooms for vegan), and broth.
- Kimchi toastie: Layer kimchi and cheese in a toasted sandwich — a crowd favourite!
- Simple stir-fry: Toss kimchi into any stir-fry for a flavour boost.

My order arrived damaged — what do I do?
We're sorry to hear that! Please take a photo of the damaged item and packaging as soon as possible and contact us at hello@gingerspantry.co.nz. We'll arrange a replacement or refund promptly.
